Foodie Friday- Chicken Pesto Baguette

Here's a super simple recipe to try out this weekend. I served it with a mixed berry salad. Yum!


1 long baguette
Fresh Mozzarella
Pesto sauce (either homemade or bought)
Chicken breast

1- Set oven to preheat at 425.

2- Cut baguette into 3rds or 4ths and slice down the middle.

3- Spread pesto over both sides of bread.

4- Add olive oil to frying pan and cook chicken as desired.

5- Place bread on baking sheet. 

6- Construct face up sandwich with cheese on one side & chicken on the other.

7- Cook in oven for aproximately 15 minutes or until cheese is melted.

8- Take out of oven and add tomato.

9- Place both sides together to form a closed sandwich.

10- Dig in!
