These baked goodies are so delicious, easy and way better for you than most snacks. I've given you the basic recipes but feel free to experiment. Keep it simple or add things like lemon, spices cheese etc... The skies the limit. Happy weekend everyone. Enjoy!

Baked Carrot Chips

Slice carrots
Toss in coconut oil
salt and pepper to taste

Spread on baking sheet
Bake at 425 for aprox 10-15 min or until crispy

Baked Parmesan Edamame

2 cups cooked edamame (if frozen thaw beforehand)
2 tablespoons olive oil
1/4 cup parmesan cheese
1/4 cup flour
1/2 teaspoon wasabi powder (optional)
 salt + pepper to taste

Preheat Oven to 400 degrees
If frozen place edamame in colander and rinse with cold water
Spread on baking sheet
Drizzle with olive oil and parmesan cheese
Bake 30 min or until crispy

Baked Chickpeas

1 can chickpeas (garbanzo beans)
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic salt
1 1/2 teaspoons extra virgin olive oil

Preheat the oven to 400 degrees
Line a baking sheet with parchment paper
Drain and rinse garbanzo beans. Dry between 2 layers of paper towels, rubbing gently to remove skins. Discard skins and place chickpeas in a bowl.
Toss with next 4 ingredients and pour onto prepared baking sheet.
Bake for 30-45 minutes. Stir the beans at least once during baking for even browning.
