Foodie Friday- Breakfast for Dinner

Who doesn't love breakfast for dinner!? It feels a little bit naughty, like you're getting away with something. This decadent take on french toast is no different and so very scrumptious! My family devoured it up. Treat yourself this weekend and try it out for yourself.

Ricotta stuffed french toast with fried plantains



 Ingredients

  • 1 long and slightly stale baguette
  • 3 Eggs
  • 1 Cup whole milk or heavy cream
  • 1 Teaspoon cinnamon 
  • 1 Teaspoon Nutmeg
  • 1 package of bacon
  • 2 large ripe plantains- when cooking plantains make sure they look overly ripe (almost black) before slicing
  • 2 cups ricotta cheese
  • Syrup


Directions

Combine eggs, milk, cinnamon and nutmeg, whisking together in a bowl
Slice baguette into four pieces and then down the middle then set aside.
Cook bacon in frying pan
Drain  bacon drippings into a cup and set to the side
(Side Note- You can forgo the bacon and use butter or oil for the frying if that is your preference)
Slice plantains and fry in the drippings or whatever you are using for grease (drain on paper towel) 
Soak baguette in milk and eggs and fry in the same manner
Once the baguettes look nice and golden brown remove from pan
Spread both sides of bread with ricotta cheese and top with plantains
Combine into sandwich and cover with syrup
Serve with bacon on the side. DELISH!!!!!
