Foodie Friday-Sweet potato Quesadillas

This recipe is as easy as it is delicious. The combination might sound a bit unexpected but I promise the flavors work amazingly well together. Sweet and savory, it's the perfect way to turn a simple staple like a quesadilla into something even more hearty and suitable for the winter months.


  • Flour Tortilla
  • Shredded Cheese (I chose a Mexican blend)
  • Cooked and mashed sweet potato
  • Chopped Green chills (fresh or from the can)
  • Fresh Cilantro


  • Warm tortilla in frying pan over medium to low heat, flipping so that it is warm to the touch on both sides
  • Sprinkle cheese on one half of tortilla
  • Add mashed sweet potatoes on top of cheese
  • Sprinkle on desired amount of green chills and cilantro
  • Fold tortilla over on itself
  • Allow to cook, flipping from side to side until cheese, sweet potatoes, chills and cilantro are melted together
  • Serve with a side of black beans.
